First, just a little about me…

I have been married for 13 years I married my High School sweet heart. We wanted a larger family and so when it came time we had 5 kids about 2 years apart. It was wonderful. Unfortunetly, for my body it was not as wonderful. I gained a lot of weight which really gave me a bad selfesteem. There are people that naturally are thin without much effort. That is not me, sad to say!

When I did the HCG diet and lost 40 lbs, I decided to change my lifestyle because it wasn’t getting me where I wanted to be. I was also very motivated to help others complete the HCG diet successfuly and reach their goals as well. It has been so fulfilling helping others and seeing them succeed.

After I lost weight I worked hard at the gym and with my eating habits to help me achieve my overall goal to compete in Physique competitions. I am not perfect and have had LOTS of hiccups and moments of weakness. That is to be human! I don’t relate with the 100% all the time attitude. It sounds nice from a motivational perspective but, it is impossible to be 100% at everything all the time. You never learn from your mistakes if you never make any. If your struggling your not alone and I can relate.

There is a sense of inner fulfillment when you decide not to let your weaknesses beat you. Life is about overcoming. It is the only way to feel true achievement and happiness. When things come to easy to you it is easy to take them for granted.

After training for 2 years I was finally able to acheive my first goal which was to step on stage at a NPC Physique Competition. My first competition was March 23rd in Fargo, ND. In that competion I competed in the Jr. Masters Physique class which I took 1st place and in the Open Physique class I took 1st place. I also won the overall. My second competition was in Las Vegas, NV. I competed in the Physique A class (short LOL!) and I took 2nd place. I was very happy with my placings at both competitions. It has been a great experience and has only motivated me more to go further with my goals.

I often have the oportunity to talk to other members at the gym I attend who are starting their weight loss journey and I love to share all my experiences and offer hope.

I hope that you decide today to take on something difficult or challenging whatever that might be.

Growing up I was very active.  I was a part of a dance company here in Wilmington and danced in recital shows across the country. Tap, ballet, jazz you name it.  It kept me in in pretty good shape until out of nowhere I started gaining weight “Big Time”.

I had bad eating habits.  I’d eat in bed while I did my homework, watched tv, talked on the phone you name it.  McDonalds was my second home and I loved cheese sandwiches.  Next thing I knew I was 19 years old 5’4’’ weighing 253 pounds.  I was uncomfortable, and ashamed as my friends were so fit and trim.  I looked out of place and it made me so sad. Everybody said I had such a pretty face but the weight made me so unattractive.

Then I tried to lose weight on my own by dieting, using diet pills and exercising, but nothing stuck.  I was spiraling down into depression.

A friend of my mother got the lap band surgery and she lost a lot of weight quick.  I thought that would be my way out of fat girl misery.  So at 19 I got the lap band surgery.  Though my mother didn’t not want me to get the gastric bypass because I was too young and it was dangerous and I needed to have strict discipline in my eating habits.  After I had an emotional breakdown about my weight, she let me go through with it.

On the day of my surgery I weighed 253 and in two years I lost only 20 pounds.  I experienced a complication with the band.  I could not eat at all and was in terrible pain.   I was rushed to the hospital one day and had emergency surgery to adjust the band.

While hospitalized I lost a few pounds but within 2 years after surgery, I had gained all the weight I lost plus!

I tried to lose weight but the band was not working for me.  Unfortunately, in August of 2009 my mother’s health insurance company had dropped me and I could not afford to or could find an insurance provider to cover me.  I was stuck with the lap band and experienced another attack and further complications with the band yet I could not see a Dr.  Being sick in pain and depressed was a constant state of mind for me for several months.  Until in June 2010 I was able to acquire health insurance and I was able to get my second surgery to have the lap band removed permanently!

Now I was on my own in my weight loss quest (not that I had much success before).  So I had heard about Gastric bypass surgery.  I saw how people two three times my size lose weight and how it was much safer and with better results than the lap band.  But unfortunately for me I was unable to get any new bariatric surgery because I was allowed one bariatric per lifetime (lap band is counted as one).

I was very depressed and confused and struggled with the fact that I would never lost weight and be happy.  In august 2010 my mother got the gastric bypass which made me upset and extremely jealous I felt like it was not fair.

By the year 2011 I was 263 pounds my heaviest ever and I didn’t care about life any more all I wanted to do was eat and drink. My mom had lost over 100 pounds, and I felt like she betrayed me. I didn’t want to live anymore.

In October of 2011 I met a great guy who lose over 60 pound by himself and said he would help me lose the weight and get fit. We worked out about 3 to 4 times a week and the motivation was there but the weight wasn’t coming off fast enough for me and my eating habits still didn’t change.

In December of 2011 I promised myself that I would lose weight my by 25 birthday, I had had enough! I wanted. With exercising and good eating habits would help me to lose 80 pounds and it give me the emotional boost I needed to strive for more.

So, I did research on diets and stumbled on the HCG diet on YouTube I was amazed by everyone’s transformations. I was feeling good about myself for the first time in a long time and made the decision to take it to the next level so I decided to try the HCG diet.

January 13, 2012 was my first round of the diet I did it for 40 days and lost 36 pound. It was very hard and overwhelming but I was succeeding.  The more I lost, the more I wanted to lose.  I was experiencing unbelievable results.

What I’ve done for myself was not without a lot of determination and hard work.  It seemed to me others so easily could lose weight but I had to struggle.  I had to change my way of thinking about food.  Though my family and friends would give me advice on what to eat, when and the benefits of exercise, I had to come to grips with the truth that I had to change my mind and go for it.  I stopped making excuses and made my own meals at home. (I’m sure McDonald’s misses me).  I had to not wait for friends to come join me at the gym; I had to push myself to go by myself from time to time.  I surrounded myself with people who push me and sometimes held my hand to get me through it all.

My goal the one I had set to reach by my 25 birthday, I made it!!   I had lost 60 pounds.  I went from 253 to 193.  I was so proud of myself and cried tears of joy because I promised myself I would be under 200 pounds by my 25 birthday.

I continued the diet 3 more times and all together lost 70 pounds 250 to 183 and now I my goal to hit 160. I can’t wait until I can start my round 5.  I know I’m going to have to step up my game.  Some junk food has crept into my diet.  But I am still determined, single minded to lose another 15 – 20 pounds.

My journey so far has been full of tears, smiles and uncertainty and joy but I know this is only the beginning.  Everything is not for everybody, but once I realized this is the only me I got, I was determined to be the best me inside and out.  This journey has showed me that I can be my own worst enemy, but more important I am my best friend I’m resilient, steadfast and I can do anything!


Why it is important not to stress when trying to lose weight.

Normally, it’s present in the body at higher levels in the morning, and at its lowest at night. Although stress isn’t the only reason that cortisol is secreted into the bloodstream, it has been termed “the stress hormone” because it’s also secreted in higher levels during the body’s ‘fight or flight’ response to stress, and is responsible for several stress-related changes in the body. Small increases of cortisol have some positive effects:

  • A quick burst of energy for survival reasons
  • Heightened memory functions
  • A burst of increased immunity
  • Lower sensitivity to pain
  • Helps maintain homeostasis in the body

While cortisol is an important and helpful part of the body’s response to stress, it’s important that the body’s relaxation response to be activated so the body’s functions can return to normal following a stressful event. Unfortunately, in our current high-stress culture, the body’s stress response is activated so often that the body doesn’t always have a chance to return to normal, resulting in a state of chronic stress.

Higher and more prolonged levels of cortisol in the bloodstream (like those associated with chronic stress) have been shown to have negative effects, such as:

  • Impaired cognitive performance
  • Suppressed thyroid function
  • Blood sugar imbalances such as hyperglycemia
  • Decreased bone density
  • Decrease in muscle tissue
  • Higher blood pressure
  • Lowered immunity and inflammatory responses in the body, slowed wound healing, and other health consequences
  • Increased abdominal fat, which is associated with a greater amount of health problems than fat deposited in other areas of the body. Some of the health problems associated with increased stomach fat are heart attacks, strokes, the development of metabolic syndrome, higher levels of “bad” cholesterol (LDL) and lower levels of “good” cholesterol (HDL), which can lead to other health problems!

We have a lot of clients asking us, “How do I eat after I am done with maintenance so that I don’t gain weight back”. We would like to share some great recipes that are healthy and delicious. Can’t get better than that. We will be trying to post healthy tips on how to have a healthy lifestyle on a regular basis. Invite your friends to share in this information and even share our links. JUST TO BE CLEAR THAT THIS RECIPE IS NOT TO BE USED DURING THE 500 VLCD OR MAINTENANCE. ONLY TO BE USED AFTER YOU HAVE COMPLETED THE DIET.

Dessert:

*Ice Cream in a bag
This serving size is for 1 person so just multiply for addition people
3 Packets of Stevia
1/2 cup Half-n-Half
1/2 cup Heavy whipping cream
1/2 tsp vanilla
3/4 cup of rock salt
Ice (enough to fill gallon bag 1/2 full)
1 pint size ziploc bag
1 gallon size bag
Combine Stevia, half-n-half, & vanilla in blender, mix on low (do not mix to long as it will thicken)
Pour in pint size bag and seal tightly.
Combine ice and rock salt in gallon ziploc. Place small bag into big bag and seal. Shake bag until mixture turns into ice cream. It will take about 5-10 minutes.
If desired, add nuts or fruit. For chocolate ice cream add 1 tbsp of cocoa.

Condiments:

*Ketchup
1 can El Pato Sauce
2 cans small Tomato Paste
10 drops of liquid Stevia
Salt, pepper and garlic to taste

Mix all together to have your home made sugar free ketchup. Read labels on tomato past and spices to make sure you are getting the sugar free options.

Entree:

*Starch Free Pancakes

*6 egg whites
*1 scoop protein powder (Good recommendation Dymatize Elite Gourmet, it’s sugar free and tastes great) available on www.houseoffitness.net
*1/2 tsp Xanthan gum (great for thickening)
*1 tsp Vanilla
*2 Tbs of favorite sweetener, Stevia in the Raw, Splenda etc…
*1 Tbs of cinnamon
*1/2 Tsp Salt

*Sugar free syrup (available at Walmart…Maple Grove Farms)

Put all ingredients in the blender and mix. Then use cooking spray on a non stick pan. Pour batter in to pan in regular size cakes and cook at medium high temperature. You have to cook a bit longer than normal pancakes to make sure they are not to soggy on the inside. Spread Can’t Believe It’s Not Butter on top and pour some sugar free maple syrup on top and enjoy. Recipe yields about 3 or 4 cakes depending on size of cakes.

*Meat Loaf

lean beef
2 eggs
diced onion
salt, pepper, garlic
Use homemade ketchup recipe
Slice tomatoes

Mix together beef with eggs and diced onions. Add salt, pepper, and garlic to taste. Press in casserole dish. Spread homemade ketchup on top and lay sliced tomatoes over the top of the ketchup. Cook in over at 250 degrees for about 45 mins. Check center of Meat loaf to make sure beef is cooked completely.

*Creamy Chicken Soup

6 chicken breast
1 green pepper
(you can also use red and/or yellow peppers as well)
1 green or regular onion
1 block of light cream cheese
1 can of evaporated milk
Salt
1 tsp. Garlic Powder
1/2 tsp. Paprika (for less spicy taste reduce or eliminate)
1/2 tsp. Oregano
Olive Oil

In a large frying pan, using olive oil, saute the chicken and veggies until the chicken is cooked and the veggies are softened. Put chicken in first since it will take longer to cook than the veggies.
Once they are cooked put 1 can of condensed milk and stir. NOTE: ONCE THE CONDENSED MILK IS ADDED YOU MUST REDUCE HEAT AND STIR OFTEN BECAUSE THE BOTTOM WILL TEND TO BURN. Break up 1/2 to 1 block of light cream cheese (depends on how creamy you want it) and place throughout the pan. Place lid on soup until the cream cheese is softened. Once the cream cheese is softened stir till mixed in and put Garlic Powder, Paprika and Oregano. Salt to taste. Then stir and it is ready to serve. Recipe yields about 4 servings.

*Lasagna

*1 3/4 pound lean ground beef
*1/2 cup minced onion
*2 cloves garlic, crushed
*1 (28 ounce) can crushed tomatoes (check ingredients to get the brand that is sugar free)
*2 (6 ounce) cans tomato paste (check ingredients to get the brand that is sugar free)
*2 (6.5 ounce) cans canned tomato sauce (check ingredients to get the brand that is sugar free)
*1/2 cup water
*1 packet of stevia
*1 1/2 teaspoons dried basil leaves
*1/2 teaspoon fennel seeds
*1 teaspoon Italian Herb McCormick Grinder seasoning
*1 tablespoon salt (can substitute with celery salt also)
*1/4 teaspoon ground black pepper
*4 tablespoons chopped fresh parsley
*1 bag of spinach
*5 zucchini (depending on personal preference)
*1/2 teaspoon salt
*16 ounces ricotta cheese
*1 egg

(NOTE: do not use grated cheese because of the corn starch)
*3/4 pound mozzarella cheese, sliced
*3/4 cup grated Parmesan cheese

Optional: For a more cheese taste
*1/2 cup grated American cheddar cheese

In a larger sauce pan on the oven, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with stevia, basil, fennel seeds, Italian Herb seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
Preheat oven to 375 degrees F (190 degrees C).
To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9×13 inch baking dish. Evenly spread spinach and slices of zucchini (per your taste preference) over meat sauce. Spinach and zucchini is added raw because it will cook while the lasagna is cooking. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Recipe yields about 12 servings.

Maintanence Recipe Idea’s and Tips

Here are a few tips and recipes that you can use on the maintenance phase. Just remember that you can take a lot of your normal recipes and change or replace things to make it work for maintenance. Just get creative. Also refer to our blog post that shows the sugar to stevia conversion click here. That will help you replace sugar in your recipes with stevia. The maintenance is not a strict program like the 500 VLCD so it is hard to have it all set out. You can have a lot more food varieties and you are only trying to stay away from starches and sugar (including artificial sugar). We have a list of starchy veggies on our website click here and we give you some recipe ideas below. But for us to list all the foods that you can have will take quite a bit of time. This is the time that our clients can use to create a new eating habit. Read lots of labels, familiarize yourself with the nutrition that is out there and what certain items contain so that when you go back to eating normal you are more aware of what you are eating and it will help you eat more healthy and maintain the weight. One important thing is to make sure you are reading the ingredients in an item not the nutritional facts. There is natural sugar in everything but it is the added sugar that you will want to be aware of.

On the maintenance phase your options are much more open. you can have dairy, a larger variety of meats and veggies (just make sure you stay away from starchy veggies) and fruits. One key to the maintenance is that you can use normal recipes and just replace the items that are starchy or sugar with items that are not. For example I used to make a lasagna and instead of a noodle layer we would do zucchini and spinach on that layer. Everything else was OK. You have your meat layer and your cheese layer and then use tomato paste and tomato sauce that come in sugar free cans. So you can really get creative. You will be reading lots of labels.

Dessert:

Once they are cooked put 1 can of condensed milk and stir. NOTE: ONCE THE CONDENSED MILK IS ADDED YOU MUST REDUCE HEAT AND STIR OFTEN BECAUSE THE BOTTOM WILL TEND TO BURN. Break up 1/2 to 1 block of light cream cheese (depends on how creamy you want it) and place throughout the pan. Place lid on soup until the cream cheese is softened. Once the cream cheese is softened stir till mixed in and put Garlic Powder, Paprika and Oregano. Salt to taste. Then stir and it is ready to serve. Recipe yields about 4 servings.

*Lasagna

*1 3/4 pound lean ground beef
*1/2 cup minced onion
*2 cloves garlic, crushed
*1 (28 ounce) can crushed tomatoes (check ingredients to get the brand that is sugar free)
*2 (6 ounce) cans tomato paste (check ingredients to get the brand that is sugar free)
*2 (6.5 ounce) cans canned tomato sauce (check ingredients to get the brand that is sugar free)
*1/2 cup water
*1 packet of stevia
*1 1/2 teaspoons dried basil leaves
*1/2 teaspoon fennel seeds
*1 teaspoon Italian Herb McCormick Grinder seasoning
*1 tablespoon salt (can substitute with celery salt also)
*1/4 teaspoon ground black pepper
*4 tablespoons chopped fresh parsley
*1 bag of spinach
*5 zucchini (depending on personal preference)
*1/2 teaspoon salt
*16 ounces ricotta cheese
*1 egg

(NOTE: do not use grated cheese because of the corn starch)
*3/4 pound mozzarella cheese, sliced
*3/4 cup grated Parmesan cheese

Optional: For a more cheese taste
*1/2 cup grated American cheddar cheese

In a larger sauce pan on the oven, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with stevia, basil, fennel seeds, Italian Herb seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
Preheat oven to 375 degrees F (190 degrees C).
To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9×13 inch baking dish. Evenly spread spinach and slices of zucchini (per your taste preference) over meat sauce. Spinach and zucchini is added raw because it will cook while the lasagna is cooking. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Recipe yields about 12 servings.

Non Processed Foods for Your Health

Here are some tasty alternatives to the unhealthy processed food choices. These alternatives are delicious and very healthy; just as nature intended them to be.

Whole Grains

Whole grain products generally have undergone relatively little processing, and unlike refined grains, they have not been stripped of their bran and germ in the milling process. Whole-grain products will have whole grain as the first ingredient on the label. Whole grains that can be found in the non-processed form include oats, buckwheat, brown rice and quinoa. Whole grains are better sources of fiber and other important nutrients, such as selenium, potassium and magnesium.

Nuts

Nuts are considered non-processed foods when they come in raw form. Almonds, pecans, walnuts, pistachios, hazelnuts, pine nuts, peanuts and cashews are often eaten raw.

A handful of raw nuts should be consumed daily either in the form of an energizing snack or added to a meal. Eating a moderate amount of nuts regularly has been shown to promote healthy weight

Honey

Most honey undergoes some form of processing, but you can get raw honey that remains non-processed. Honey in this form can generally be found at health food stores. In any situation where you would normally use processed sugar or artificial sweetener, use honey instead.

Fruits

Raw fruits do not undergo any processing. Fruit in frozen or dried forms has been through some degree of processing.

Vegetables

Vegetables frequently are consumed raw, but like fruits, they undergo processing if they’re frozen or canned. Among the most nutritious vegetables in unprocessed form are kale, mustard greens, spinach, green beans, carrots, onions, squash, eggplant and broccoli.

Incorporating these items into your eating habits along with a conscious effort to avoid boxed, canned or convenience foods will get you feeling good, looking good and living good!
